food glorious food

One of my passion's is food! I love cooking it, baking it and most of all eating it! As a vegan I try a variety of different food's and always try to 'veganize' any favorite dishes for my non vegan family members.
So I thought I would share with you some of my family's favourite meals and mine.
The first time I ever made a quiche without using eggs,I was so excited and impressed with myself (i had never even heard of a quiche that wasnt made using eggs) that I text all my family and friends and told practically everyone I could including some old dear waiting for the bus! :-) So here is the result, I hope you enjoy it as much as we do....

TOFU QUICHE:
                          For the pastry mix 225g of plain flour with a pinch of salt and rub in 100g dairy free marg such a Pure.Use a knife and cut and stir whilst adding about 2 tbls of very cold water to form a stiff dough,add a little more if you feel it is too dry.Turn dough on to a floured surface and knead lightly, roll out in to a circle and put in a quiche dish.
                          Lightly fry vegetables of your choice,I used 4 mushrooms,1 small onion and 1/4 of a red pepper in a small amount of olive oil,for about 5mins or until cooked to your taste.
                          In a blender put a block of firm tofu (I use Couldron original tofu 396g) with 1/2 tsp turmeric,1 tsp mixed dried herbs, 1/4 to 1/2 tsp salt, pepper to taste and 1/4 pint of  soya milk. Blend until smooth. You want a 'sloppy' mix not a mix to thick so if you think it is too thick add a little more soya milk and blend again.Add your cooked vegetables to the mixture and pour into pastry and bake for about 30 mins or until a knife inserted comes out clean at oven temp 425d/ 220c/ gas mark 7. eat hot or cold and enjoy :-)

dinner time

The sun is out again so I decided that while it was today IS the day I would clean the window's and do the washing :-) After all that hard work:) I deserved to have my 'lunch on the lawn'....
 wholemeal bread with Redwoods cheating ham...
 went into the fridge and the only salad stuff I had left was lettuce,cress and tomatoes, so thats what I had....
and rice with roasted veg. I roasted onions, mushrooms,slices of tinned potatoes and peppers in olive oil and butter seasoned with salt,pepper and mixed herbs.mixed them in with cooked rice and butter beans..yummy
all together now x

ray of sunshine

After a long drawn out winter, a tiny ray of sunshine always makes you have a skip in your step :-)
So what do I do when the tiny bit of first sunshine comes out.....wash my windows so I can see them sparkle? hang my washing out for the first time this year to have them smell of spring?

no no no.....me and hubby go out on our bike! :)



We went to York.......the windows and washing can wait till another day!!!   :)
